Chicken Burrito Skillet with RiceSelect

Ingredients

- 15.5 oz15.5 oz15.5 oz Black Beans, canned, strained and rinsed
- 1/2 cup1/2 cup1/2 cup Mexican Rice (Red Rice), or RiceSelect Texmati Rice
- 1 cup1 cup1 cup Water
- 1/2 cup1/2 cup1/2 cup Salsa
- 3/4 cup3/4 cup3/4 cup Mexican Cheese Blend, shredded and separated
- 111 Tomato, chopped
- 1 cup1 cup1 cup Romaine Lettuce, chopped
- 1/21/21/2 Avocado, cubed
- pinch pinch pinch Salt
- pinch pinch pinch Black Pepper
- Cilantro, chopped, as desired

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add the avocado oil to a large pan over medium high heat.
- Add in the chicken and cook for 3 mins.
- Mix in the chopped onion, taco seasoning, black beans, rice, and water, and bring to a boil.
- Cover and cook for 10-12 minutes until the water is absorbed into the rice.
- Mix in the salsa, ½ cup of shredded cheese, and salt and pepper to taste.
- Top the mixture with the remaining cheese, lettuce, tomato, avocado, and cilantro.
- Serve and enjoy!
