Chipotle Beef Soup
You are going to love this flavorful Chipotle Beef Soup that can be made with left over roast beef or beef of choice! You could even use shredded chicken. To make this even easier I used Kettle & Fire Chipotle Beef Bone Broth but don’t worry you can use regular beef broth and chipotle spice if you can’t wait to make it. This is such a fantastic way to use up leftover and create a healthy hearty soup!
Ingredients
- 1.5 lb1.5 lb1.5 lb Roast Beef Tenderloin, cut in bite size pieces - see note
- 2 - 3 whole2 - 3 whole2 - 3 whole White Potatoes, peeled & cubed
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 3 whole3 whole3 whole Carrots, large, sliced
- 3 pieces3 pieces3 pieces Celery, diced
- 1 cup1 cup1 cup Onion, diced
- 2 cups2 cups2 cups Tomato Sauce
- 5 oz5 oz5 oz Baby Kale
- 6 cups6 cups6 cups Chipotle Beef Bone Broth, or beef broth + 2 tbsp chipotle spice
- 1 tsp1 tsp1 tsp Salt
- 1 tsp1 tsp1 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Ground Cumin

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat oil
- Add onions & celery & cook till onions are translucent
- Add carrots, tomato sauce, beef broth
- Bring to a boil about 5 minutes
- Add potatoes & beef & bring back to a boil & lower heat & simmer 15 minutes
- Add spice (+ chipotle spice if using)
- Add kale, stir till wilted
