chipotle raspberry black bean turkey skillet
chipotle + raspberry is a knock-out flavor combo. in manhattan, ks there is a restaurant called "so long saloon" that serves them chipotle raspberry black bean dip. everyone is obsessed with it! this is a meal time version of it that is seriously easy to throw together, boosted with protein, lower in sugar, but boosting with flavor. one-skillet meal win!
Ingredients
chipotle raspberry jam
- 3/4 cup3/4 cup3/4 cup Raspberry Superfood Jam - Smash Foods

- 3/4 cup3/4 cup3/4 cup No-Sugar Hickory BBQ Sauce - Yo Mama's Foods

- 1/2 clove1/2 clove1/2 clove Golden Monkfruit Sweetener (with Allulose) - Lakanto, or sweetener of choice

- 1 tsp1 tsp1 tsp Chipotle Powder
skillet
- 1 lb1 lb1 lb Ground Turkey

- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder

- 0.5 tsp0.5 tsp0.5 tsp Onion Powder

- 1/2 tsp1/2 tsp1/2 tsp Salt and Pepper, to taste
- 15 oz15 oz15 oz Black Beans, drained & rinsed

- 4 oz4 oz4 oz Cream Cheese, Light
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Nutritional Yeast

- 4-6 oz4-6 oz4-6 oz Pepper Jack Cheese, shredded, or cheese of choice
for serving
- Cilantro, for garnishing

- preheat oven to 400.
- to a food processor or using an immersion blender, blend all ingredients for chipotle raspberry jam.
- in a oven safe skillet, brown ground turkey, then add all seasonings.
- once turkey is cooked, mix in chipotle raspberry jam (reserving ~¼ cup for topping) & drained black beans.
- in a small bowl, combine cream cheese, greek yogurt, & nutritional yeast.
- spread the creamy layer on top of turkey mixture, then top with cheese.
- place in the oven for 12-15 minutes, with option to broil last 3-5 minutes.
- garnish with cilantro & extra chipotle raspberry jam.
- serve with your favorite tortilla chips or veggies for dipping into.
