cobb salad + “honey” mustard dressing
this may be a variation from a traditional cobb salad, but who said you can't make it with your own spin? this bad boy is loaded with goodies & a perfect lunch for a spring or summer day!
Ingredients
- 1 - 2 cup1 - 2 cup1 - 2 cup Arugula, or leafy green of choice
- 3 - 4 oz3 - 4 oz3 - 4 oz Deli Ham, or leftover meat of choice
- 111 Egg, Hard Boiled, diced
- 111 easy baked bacon (click for recipe), chopped
- 1 - 2 cup1 - 2 cup1 - 2 cup Frozen Vegetables, I roasted root veggies & broccoli
- Radish, or other raw veggies - tomatoes, avocado, etc.
- Parm Crisps, or cheese
- Chef’s Blend Smoked Salt - Redmond
- Black Pepper
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Dijon Mustard
- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Apple Cider Vinegar
- 1/2 tsp1/2 tsp1/2 tsp Salt and Pepper, to taste

- drizzle with the "honey" mustard dressing.
- I like to top mine with redmond's hickory smoked salt & black pepper.
