cobb salad + “honey” mustard dressing
this may be a variation from a traditional cobb salad, but who said you can't make it with your own spin? this bad boy is loaded with goodies & a perfect lunch for a spring or summer day!
Ingredients
- 1 - 2 cup1 - 2 cup1 - 2 cup Arugula, or leafy green of choice
- 3 - 4 oz3 - 4 oz3 - 4 oz Deli Ham, or leftover meat of choice
- 111 Hard Boiled Egg, diced
- 111 Bacon, chopped
- 1 - 2 cup1 - 2 cup1 - 2 cup Frozen Vegetables, I roasted root veggies & broccoli
- 111 Radish, or other raw veggies - tomatoes, avocado, etc.
- 111 Parm Crisps, or cheese
- 111 Redmond Real Salt, I love their smoked salts!
- 111 Black Pepper
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Coarse-Dijon Mustard (Noble Made)
- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 tsp1 tsp1 tsp Apple Cider Vinegar
- 111 Salt and Pepper, to taste

- first make dressing, by combining all the ingredients together - refrigerate until ready to serve.
- to build salad, start by laying a bed of greens.
- then add your proteins - meat + eggs + bacon.
- then add any veggies or fruits you like - I like adding some roasted veggies & some raw veggies.
- add parm crisps or cheese.
- drizzle with the "honey" mustard dressing.
- I like to top mine with redmond's hickory smoked salt & black pepper.
