Creamy Classic Ditalini Pasta Salad (Edit recipe)

Every family has a pasta salad that makes its way to their tables every summer. In our family, this was it. This creamy, classic ditalini pasta salad was actually a summer staple made by a family friend that was so close to us, I'd consider him my uncle. When he passed away and we realized we didn't have a recipe, I did some research and tried it myself. It, of course, is not totally the same but it will do. Our uncle also used to add teeny tiny shrimp which was a super nice addition. I did not add it here, but you totally can toss it in when you add the veggies. I hope you and your family love this as much as mine!

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Cook pasta according to package instructions. When finished, drain into a colandar and let cool.
  2. While the pasta is cooking, dice your bell pepper, cucumber and red onion and set aside.
  3. In a separate bowl, combine mayo, vinegar, sugar, dijon mustard, salt, pepper, garlic powder, and paprika until fully combined.
  4. Pour the pasta in a large bowl.
  5. Stir in the chopped celery, peppers, onions, and cucumbers.
  6. Pour the dressing over the pasta and toss to completely coat with dressing.
  7. Serve right away, or cover and let chill in the fridge until ready.
  8. Give it a good stir before serving, and enjoy!
