Creamy Classic Ditalini Pasta Salad
Every family has a pasta salad that makes its way to their tables every summer. In our family, this was it. This creamy, classic ditalini pasta salad was actually a summer staple made by a family friend that was so close to us, I'd consider him my uncle. When he passed away and we realized we didn't have a recipe, I did some research and tried it myself. It, of course, is not totally the same but it will do. Our uncle also used to add teeny tiny shrimp which was a super nice addition. I did not add it here, but you totally can toss it in when you add the veggies. I hope you and your family love this as much as mine!
Ingredients
For The Pasta Salad
- 1 lb1 lb1 lb Ditalini
- 1 whole1 whole1 whole Bell Pepper, green or red, diced

- 1 cup1 cup1 cup English Cucumber, diced
- 0.25 cup0.25 cup0.25 cup Red Onion, diced
For The Dressing
- 1 cup1 cup1 cup Mayonnaise
- 1 Tbsp1 Tbsp1 Tbsp Dijon Mustard
- 1 Tbsp1 Tbsp1 Tbsp Red Wine Vinegar
- 1 Tbsp1 Tbsp1 Tbsp Granulated White Sugar

- 0.25 tsp0.25 tsp0.25 tsp Himalayan Pink Salt

- 0.25 tsp0.25 tsp0.25 tsp Black Pepper

- 0.25 tsp0.25 tsp0.25 tsp Garlic Powder

- 0.25 tsp0.25 tsp0.25 tsp Paprika

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Cook pasta according to package instructions. When finished, drain into a colandar and let cool.
- While the pasta is cooking, dice your bell pepper, cucumber and red onion and set aside.
- In a separate bowl, combine mayo, vinegar, sugar, dijon mustard, salt, pepper, garlic powder, and paprika until fully combined.
- Pour the pasta in a large bowl.
- Stir in the chopped celery, peppers, onions, and cucumbers.
- Pour the dressing over the pasta and toss to completely coat with dressing.
- Serve right away, or cover and let chill in the fridge until ready.
- Give it a good stir before serving, and enjoy!
