Cucumber Radish Salad
Crunchy radishes and Persian cucumbers in the most delicious creamy sour cream and fresh herb dressing is the perfect summer salad! It is refreshing and comes together quickly making it the perfect side dish. I especially love this salad when the radishes and cucumbers are fresh from the garden (or your neighbor's who so generously shares)!
Ingredients
- 2 bunch2 bunch2 bunch Radish, cleaned and sliced thin
- 4 - 5 whole4 - 5 whole4 - 5 whole Persian Cucumber, sliced thin
- 0.5 cup0.5 cup0.5 cup Forager Project Dairy-Free Sour Cream Alternative
- 0.25 cup0.25 cup0.25 cup Chives, fresh, chopped
- 0.25 cup0.25 cup0.25 cup fresh Dill, chopped
- 1 tsp1 tsp1 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- Combine in a small bowl, sour cream, chives, dill, salt and pepper, mixing well
- NOTE: If you are not going to enjoy this salad right after making it, you should sweat your cucumbers by laying them on paper towels and sprinkle with salt. Let sit for an hour or so.
- In a large bowl add cucumbers, radishes and sour cream mixture tossing well with a rubber spatula
