Creamy Roasted Veggie Pasta Sauce
If you're looking to feed your family more veggies without them actually knowing they are eating veggies, this is the perfect meal for you. It's fairly simple to make, very nutrient-dense, and makes a good size batch. You can use half now, and freeze half for later. It would also be delicious as a fun sauce on chicken parm, in lasagna or baked ziti, and more. Get creative and enjoy!
Ingredients

- 1 whole1 whole1 whole Red Bell Pepper, stems and seeds removed, cut into large pieces
- 1 whole1 whole1 whole Sweet Potato, peeled and trimmed, cut into large cubes
- 1 whole1 whole1 whole Yellow Onion, trimmed and peeled, cut into large pieces
- 4 cloves4 cloves4 cloves Garlic, trimmed and peeled

- 3 Tbsp3 Tbsp3 Tbsp Extra Virgin Olive Oil
- 1 cup1 cup1 cup Bone Broth

- 12 oz12 oz12 oz Marinara Sauce
- 1 lb1 lb1 lb Pasta

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 400f.
- Prepare all veggies. Place on a baking sheet and toss with olive oil and salt. Roast until cooked through (20-25 minutes).
- While veggies are roasting, cook pasta according to package instructions.
- Once veggies are finished, add to a blender with broth and marinara.
- Blend until smooth. You can add salt and pepper to taste or adjust liquid amounts here to make it thinner if you prefer.
- Toss as much as you want with pasta, serve with grated parmesan and enjoy!
- Freeze or store extra sauce, if any, in an airtight container.
