Gluten Free Apple Pie Cookie Bars
This might be the only apple dessert you will want to make during the fall. It is a cookie base, topped with cooked apple pie filling, a crumb topping, and then drizzled with a powdered sugar glaze when cool.
Ingredients
- 2 whole2 whole2 whole Granny Smith Apple, peeled and chopped
- 2 Tbsp2 Tbsp2 Tbsp Unsalted Butter
- 1 Tbsp1 Tbsp1 Tbsp Brown Sugar
- 1 tsp1 tsp1 tsp Little Palates Apple Cinnamon seasoning
- 1/2 cup1/2 cup1/2 cup Unsalted Butter, at room temperature, melted, and cooked to brown butter
- 210 grams210 grams210 grams Primal Palate Gluten-free All-Purpose Flour, 1 3/4 cup spoon filled and leveled
- 2 tsp2 tsp2 tsp Baking Powder
- 1 tsp1 tsp1 tsp Himalayan Pink Salt, fine salt
- 1 tsp1 tsp1 tsp Little Palates Apple Cinnamon seasoning
- 100 grams100 grams100 grams Granulated White Sugar, 1/2 cup
- 50 grams50 grams50 grams Brown Sugar, 1/4 cup
- 1 whole1 whole1 whole Egg, one large egg at room temp
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 2/3 cup2/3 cup2/3 cup Primal Palate Gluten-free All-Purpose Flour
- 1/4 cup1/4 cup1/4 cup Granulated White Sugar
- 1/4 cup1/4 cup1/4 cup Unsalted Butter, cold, cubed
- 1/3 cup1/3 cup1/3 cup Caramel Baking Chips
- 1 cup1 cup1 cup Powdered Sugar
- 3 Tbsp3 Tbsp3 Tbsp Heavy Cream (Whipping Cream), 2-4 tablespoons

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Heat a cast iron skillet or stainless steel skillet over medium heat, and add the 2 tablespoons of butter to cook the apples.
- Add the chopped apples, and saute over medium heat for 10 minutes, turning down to medium low if the heat is too high.
- Add the brown sugar and Apple Cinnamon Little Palates seasoning to the apples, and stir to combine evenly.
- Cook the apples until they are fork tender and glossy, then allow to cool while you make the cookie batter.
- Melt your room temperature butter over medium low heat, turn the heat up to medium once the butter is melted to cook the melted butter until it browns if desired. Browning the butter is not necessary. Remove from the heat and allow to cool slightly.
- Preheat your oven to bake at 375 degrees, and lightly grease a 9x9 square baking pan with oil.
- In a large mixing bowl, weigh the flower, and whisk in the baking powder, salt, and Apple Cinnamon seasoning.
- Whisk in the white and brown sugar.
- Pour in the melted butter, and stir to combine.
- Whisk the egg with the vanilla, and pour into the batter. mix to combine evenly.
- Pour the batter into your prepared baking dish, pressing it into an even layer.
- Pour the cooked apples over the batter, spreading into an even layer.
- Sprinkle caramel baking chips over the apples and batter.
- Combine the flour, sugar, and cold cubed butter together in a small bowl with your hands, and then top the dessert with the crumb topping.
- Place the pan into the center of the oven, on the middle rack, and bake for 35 minutes.
- Whisk together the powdered sugar and heavy cream until smooth. Start with 2 tablespoons of cream, and add more until you have a glaze that can be drizzled over the bars.
- Allow the apple pie bars to cool, and then drizzle with the glaze and serve.
