Grilled BBQ Stuffed Mushrooms
These Grilled BBQ Stuffed Mushrooms are loaded with smoky, cheesy flavor and finished with crispy bacon and a tangy BBQ glaze. Ingredients
- 1 lb1 lb1 lb White Mushrooms, stems removed and reserved
- 4 oz4 oz4 oz Cream Cheese, Full Fat, softened
- 1 cup1 cup1 cup Sharp Cheddar Cheese, shredded
- 222 Green Onion (Scallion), minced

- 666 Bacon

- 3 Tbsp3 Tbsp3 Tbsp Pitmaster Original (Kansas City-Style) BBQ Sauce - True Made Foods, plus more for brushing

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your grill to medium heat.
- Cook the bacon in a skillet until crispy.
- Reserve 1 teaspoon bacon drippings in the pan.
- Set bacon aside to cool.
- Finely mince the reserved mushroom stems.
- Add the minced mushroom stems and green onion to the skillet with the bacon drippings. Cook for 3 to 4 minutes, until softened and most of the moisture has cooked away.
- Crumble 3 slices of the cooked bacon and add to a mixing bowl.
- Add the cooked mushroom mixture, cream cheese, cheddar cheese, and 3 to 4 tablespoons BBQ sauce. Mix until well combined.
- Fill each mushroom cap generously with the cheese mixture.
- Place the stuffed mushrooms on the grill over indirect or medium heat. Close the lid and grill for 5 to 7 minutes, or until the mushrooms are tender and the filling is hot and melty.
- Brush the tops lightly with additional BBQ sauce.
- Cur the remaining 2 slices of bacon into bite size pieces, then place over the mushrooms and grill for 1 additional minute.
- Serve warm.
Notes
If mushrooms are cooking too fast, lower heat on grill.
