quiche… but make the crust out of TOTS. 😮‍💨🥔✨ this could be breakfast-for-dinner, a fancy brunch, or a quick meal prep situation. easy, customizable, protein-packed, gluten-free, & honestly one of those recipes that feels way fancier than the amount of effort required.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat oven to 400.
  2. to a baking or pie dish, add tater tots & bake for ~15-20 minutes or until able to smash.
  3. to a food processor, blend eggs, cottage cheese, & seasonings.
  4. remove blade from food processor, then fold in any pre-cooked protein, veggies, & cheese you like.
  5. remove tater tots from oven & lower oven temperature to 350.
  6. mash tater tots into an even layer on the bottom & sides to form the “crust”, then pour egg mixture on top.
  7. add extra cheese on top, then bake for ~40-60 minutes (if making in a 9X13, may require less time; if cooking in a 9X9 will take longer) or until eggs are set.
