okay, the harissa glaze on this salmon is truly out of this world. 😍🔥 every bite is loaded with bold mediterranean flavor, & the contrast between the spicy harissa salmon & cool, creamy tzatziki is what makes this combo so good. 😮‍💨 packed with protein, omega-3s, healthy fats, probiotics, & plenty of fresh ingredients, these gyros are colorful, satisfying, & loaded with flavor in every bite.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results

harissa salmon

  1. in a bowl, combine harissa, gryo seasoning, & monk fruit.
  2. pat the salmon dry, then spread on a generous coating of the harissa mixture.
  3. in a cast iron skillet or griddle, add a little fat of choice to the pan & place over medium high heat (~425).
  4. once heated, add salmon (skin side down) to skillet & cook for 7 minutes.
  5. flip salmon over & cook for an additional 3-4 minutes or until reaches internal temp of 145.

build your gyro

  1. make a batch of my greek yogurt tzatziki sauce.
  2. use your favorite GF pita bread or see my instructions in the notes to make a homemade “pita” using good dee’s multi-purpose bread mixture.
  3. to build your pita, start with a big dollop of the greek yogurt tzatziki sauce → harissa salmon → any other gyro inspired toppings you like (I listed some of my favorites!)

Notes

  • homemade GF "pita bread":
    • 1 box good dee's mix + 1 egg + 1/2 cup greek yogurt + 1 T ACV
    • preheat oven to 350. 
    • to a mixing bowl, whisk together greek yogurt, egg, ACV, & water.
    • add bread mix to wet ingredients & create into a dough; add any additional water as needed.
    • cut dough into ~10 balls, then flatten out into round little discs.
    • bake for 15-18 minutes (flipping halfway through) or until golden brown on top.
  • quick "pickled" red onions:
    • 1 red onion, finely sliced + 1/2 cup beet kvass + 1/2 cup water + 1/4 cup golden monk fruit
    •  in a bowl combine all ingredients & refrigerate for at least 30 minutes before serving.
