sweet & sour chicken is a classic, but i swapped the chicken for crispy seared salmon (skin-on, because that’s the best part!) for a protein-packed bowl with a boost of omega-3s.šŸšŸŸ sweet. tangy. savory. a little spicy. & packed with protein, fiber, healthy fats, & plenty of flavor.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. in a sauce pan, add all sauce ingredients → bring to a boil → reduce to a simmer to thicken.
  2. using a food processor or immersion blender, puree sauce to get rid of pineapple chunks.
  3. cook salmon filets according to my recipe.
  4. in separate skillets, cook cilantro-lime rice + sautƩed stir-fry veggies & pineapple.
  5. to build your bowl: add cilantro-lime rice → stir-fry veggies & pineapple → salmon filets → drizzle sweet & sour sauce + sesame seeds on top & enjoy!
