Hearty Chicken Stew
Okay slow cooker fans! You have been asking me for more slow cooker recipes so here you go! This Hearty Chicken Stew is a hug in a bowl. My Mom used to make a pressure cooker chicken stew and my version takes me right back to my childhood favorite! The creamy chicken broth makes the best sauce for smashing those potatoes in. Run now and get that slow cooker out!
Ingredients
- 2 lb2 lb2 lb Boneless Skinless Chicken Thigh, cut in large pieces
- 1 whole1 whole1 whole Onion, large & cut in 1/2" wedges
- 3 cloves3 cloves3 cloves Garlic, peeled & left whole
- 1 whole1 whole1 whole Bay Leaf
- 1 tsp1 tsp1 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper
- 1 tsp1 tsp1 tsp dried Thyme
- 4 whole4 whole4 whole Carrots, peeled & cut in 2" pieces on the bias
- 3 pieces3 pieces3 pieces Celery, cut in 1" pieces
- 1.5 lb1.5 lb1.5 lb Baby Potatoes, left whole
- 8 oz8 oz8 oz White Mushrooms, cut in 1/2 or 1/4 depending on size
- 8 oz8 oz8 oz Green Beans
- 2 cups2 cups2 cups Chicken Broth
- 1 cup1 cup1 cup Coconut Cream
- 1 Tbsp1 Tbsp1 Tbsp Coarse-Dijon Mustard (Noble Made)
- 1 Tbsp1 Tbsp1 Tbsp Red Wine Vinegar
- 2 Tbsp2 Tbsp2 Tbsp Arrowroot Powder

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Layer in slow cooker, onions, chicken, spice and bay leaf, carrots, celery, potatoes
- Pour broth and vinegar over
- Cover and cook on low for 4 hours
- Add mushrooms and green beans
- Cover and cook 1 more hour
- Add coconut cream mixed with mustard and arrowroot, stir to combine
- Cover and cook 1 more hour
- Remove bay leaf
