High-protein and Gluten-Free Mediterranean-Style Pitas
Another recipe masterpiece using just flour and greek yogurt! These high-protein Mediterranean-Style pitas are so easy to make, and incredibly delicious! Warm them up before you fill them with what ever you would like. Our favorite way to use them is to make grilled chicken gyros!
Ingredients
- 125 grams125 grams125 grams Gluten-Free All-Purpose Flour - Primal Palate

- 1 tsp1 tsp1 tsp Baking Powder

- 1/2 tsp1/2 tsp1/2 tsp Himalayan Pink Salt - Primal Palate

- 8 oz8 oz8 oz Plain Greek Yogurt, low fat or full fat

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to bake at 400 degrees F.
- Place a clean tea towel on your work surface, and then a sheet of parchment paper on top of the towel so the parchment doesn't slip.
- In a medium size mixing bowl, combine the flour, baking powder, and salt. Whisk to evenly combine.
- Add in the cup of yogurt, and stir until you have a shaggy dough. Knead the dough with your hand just enough to combine it into a smooth ball of dough.
- Divide the dough into 4 equal portions.
- Lightly dust the parchment paper with gluten-free flour, and place one portion of the dough onto the parchment. Start to gently press the dough ball out with your fingers into a circle.
- Once the shape has been created with the dough, you can dust a rolling pin with flour, and roll out the dough until it is about a 1/4 inch thick. Repeat this step with a second ball of dough. Place the sheet of parchment paper on a baking sheet. Repeat this step with another sheet of parchment paper, as you likely wont be able to fit all 4 pitas on one sheet.
- Bake the pitas at 400 degrees in the center of the oven for 12 minutes.
- Warm the pitas before you enjoy them. We like to fill ours with lettuce, grilled chicken seasoned with our Super Gyro seasoning, tomato, onion, kalamata olives, and tzatziki sauce!
