Homemade Taquitos
If you are looking for a fun way to add veggies to your children’s diet, make these homemade taquitos. The hell to be so delicious and my kids have no idea that I had carrots in them. They also thought these were filled with chicken, but it was actually tuna fish because we didn’t have any chicken. These turned out so good. I will definitely be making these again!
Ingredients
- 6 whole6 whole6 whole Flour Tortilla

- 1 cup1 cup1 cup Tuna, Canned
- 0.75 cup0.75 cup0.75 cup Carrots
- 1 cup1 cup1 cup Plain Greek Yogurt
- 0.25 cup0.25 cup0.25 cup Salsa
- 1 Tbsp1 Tbsp1 Tbsp Cumin, Ground

- 1 Tbsp1 Tbsp1 Tbsp Garlic Powder

- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Himalayan Pink Salt

- 1 cup1 cup1 cup Mexican Cheese Blend

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees.
- Are you sure your carrots are finally chopped so that they are hidden as best as they can’t be. I cooked mine before adding them to the mixture.
- In a mixing bowl, add all of your ingredients to make the filling for the tortillas. Mixed together until it is all blended and creamy.
- Lay out the tortillas on a pan. Spread the filling over the entire tortilla. Roll into the taquito shape.
- Place on your baking sheet. Brush with olive oil. Place your pan in the oven and bake for 15 to 18 minutes or until crispy on top.
