who doesn’t love an ice cream sandwich? 🍪🍦✨

well these are even better because they start with my absolutely divine brown butter protein cookies, then get a protein upgrade with my creamy cottage cheese ice-cream, & can be customized however you like. add a layer of nut butter, roll them in something crunchy, dip them in chocolate, or mix & match all your favorite flavors.

plus, they’re packed with protein + fiber, completely gluten-free, & made without added sugar.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. first, choose & make your favorite type of brown butter cookie (using any add-ins you like).
  2. then, make a batch of your favorite flavor of cottage cheese ice-cream.
  3. finally choose which variation of sandwich you want to make - adding a scoop of nut butter, rolling it in something yummy, or dipping in chocolate.
  4. to assemble sandwich, start with a cookie, then thaw your cottage cheese ice-cream for 10 minutes & add a generous scoop to the cookie.
  5. pb & ice-cream sandwich: add a scoop of nut butter to the other cookie, then sandwich with the other half.
  6. crusted ice-cream sandwich: add another cookie, then roll ice-cream mixture in whatever crunchy things you like.
  7. dipped ice-cream sandwich: add another cookie, then melt chocolate & dip half or the whole sandwich in chocolate.
  8. keep stored in the freezer & enjoy!
