s’mores protein cookie sandwich
a bite-sized s’more?! count me in! 🔥🍪🍫✨
i took my absolutely perfect brown butter cookies, rolled them in crushed “honey graham” cereal, then sandwiched toasted marshmallows & melty chocolate right in the middle. this might be the new s'mores snack of the summer!
Ingredients
- Honey Graham Protein Cereal - Catalina Crunch, finely crushed

- Sugar-Free Dark Chocolate Chips

- Classic Vanilla Sugar-Free Marshmallow - Max Sweets, cut into mini marshmallows

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- follow my instructions for making brown butter cookies with no add-ins.
- refrigerate dough for 30 minutes, then preheat oven to 350.
- using a small cookie scoop (~1 tsp), scoop cookie dough —> roll into a ball —> roll in crushed honey graham —> place on a baking sheet.
- bake cookies for 7-8 minutes (if doing super mini cookies).
- to half of the cookies, add a mini marshmallow & chocolate chip.
- switch oven to broil & broil marshmallows + chocolate for 1-2 minutes (watching to ensure it doesn't burn).
- once it starts to toast, remove from oven & quickly add another cookie on top!
- optional: if you don't want to make a s'mores sandwich, just add honey graham cereal, marshmallows, & chocolate chips to original cookie batter. follow instructions for making regular cookies!
