comfort food lovers, this one is for YOU! smoky, creamy tex mex sausage gravy made with U.S. wellness meat's ground pork, drippy dip's salsa con queso, a homemade chorizo seasoning mix, & all the cozy goodness poured over a corn-free "cornbread" biscuit (thanks to good dee's incredible pre-made mix). then it gets topped with the perfect over-easy fried egg.💥

Ingredients
tex mex sausage gravy
- 1 lb1 lb1 lb Ground Pork - US Wellness Meats

- 10 oz10 oz10 oz Diced Tomatoes and Green Chilies, Original - Rotel

- 2 Tbsp2 Tbsp2 Tbsp homemade "chorizo" meat (click for recipe), use the "homemade chorizo seasoning" from this recipe OR buy a pre-made blend
- 2 Tbsp2 Tbsp2 Tbsp Classic Monkfruit Sweetener with Allulose (White Sugar Replacement) - Lakanto, or monk fruit sweetener of choice

- 2 Tbsp2 Tbsp2 Tbsp Arrowroot Flour
- 15.5 oz15.5 oz15.5 oz Salsa Con Queso Cheese Dip - Drippy Dip, 1 jar

- 1/2 cup1/2 cup1/2 cup Water, add more or less to reach desired gravy consistency

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
tex mex sausage gravy
- in a large skillet, add pork & cook until browned (option to drain a little bit of the grease at this time, but keep some to help form the gravy).
- once meat is cooked, add diced tomatoes/green chiles, vinegar & seasonings to make “chorizo” meat, & arrowroot starch (the starch should soak up quite a bit of the grease).
- mix in your jar of queso + water as needed; simmer for 10-15 minutes to thicken.
for serving
- make a batch of green chile “cornbread” waffle batter.
- to make the waffles as biscuits, preheat oven to 350.
- add a scoop of “cornbread” batter to a muffin tin, then bake for 30-35 minutes or until a toothpick comes out clean.
- serve tex mex sausage gravy over “cornbread” biscuits, then top with fried eggs following my PERFECTED technique!
