i love a good themed bowl, especially when it comes to poke bowls! this one is getting the warm + cozy fall vibes, but still staying bright, light, & ridiculously delicious. 🍁🐟🥬✨
maple sesame-crusted ahi tuna meets maple balsamic roasted brussels sprouts, butternut squash + beets, juicy pomegranate, crunchy walnuts, feta, & a creamy maple tahini sauce.
sweet. savory. tangy. nutty. crunchy. fresh. & basically fall in a poke bowl. 🍂
Ingredients
- Arugula, or greens of choice
- cilantro-lime cauliflower rice (click for recipe), or sub for hearts of palm rice
- seared ahi tuna (click for recipe)
- 1 Tbsp1 Tbsp1 Tbsp Balsamic Vinegar, for marinating tuna

- 1 Tbsp1 Tbsp1 Tbsp Barrel Aged Tamari Soy Sauce - Jozo, for marinating tuna

- 1 tsp1 tsp1 tsp Organic Maple Extract, for marinating tuna
- 1 Tbsp1 Tbsp1 Tbsp Golden Monkfruit Sweetener (with Allulose) - Lakanto, for marinating tuna

- Furikake, for coating tuna
- Sesame Seeds, for coating tuna
- Butternut Squash
- Brussels Sprouts
- Beetroot
- Avocado Oil

- Balsamic Vinegar

- Organic Maple Extract
- Salt and Pepper
- Radish
- Pomegranate, or dried-fruit of choice
- Walnuts, or nuts/seeds of choice
- Feta Cheese, or goat cheese
- 1/4 cup1/4 cup1/4 cup greek yogurt "honey" mustard (click for recipe)
- 2 Tbsp2 Tbsp2 Tbsp Tahini
- 1 tsp1 tsp1 tsp Organic Maple Extract
- 1 Tbsp1 Tbsp1 Tbsp Horseradish, optional

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- combines tuna + marinade; marinate for at least 30 minutes.
- preheat oven to 400.
- cut & dice any fall harvest veggies you like, then toss with oil, balsamic vinegar, maple extract, salt, & pepper.
- roast fruits & veggies for 25-30 minutes.
- follow instructions for making seared ahi tuna with sesame seeds & furikake seasoning.
- allow tuna to rest, then dice.
- to assemble poke bowls, first start with a base of greens or cauliflower rice.
- add on diced ahi tuna + maple balsamic roasted veggies + any toppings you like (I listed all my fall harvest inspired poke toppings).
- combine all ingredients for my creamy maple tahini sauce, then drizzle on top & enjoy!
