Ingredients
crust
- 1 cup1 cup1 cup One Degree Organic Oats, or almond flour
- 0.75 cup0.75 cup0.75 cup Pecans
- 0.25 cup0.25 cup0.25 cup Vanilla Protein Powder - Be Well by Kelly
- 0.25 cup0.25 cup0.25 cup Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 0.5 tsp0.5 tsp0.5 tsp Pure Vanilla Extract
- 1 pinch1 pinch1 pinch Redmond Real Salt
- 2 Tbsp2 Tbsp2 Tbsp Unsalted Butter, or coconut oil
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Water
salted caramel
- 0.5 cup0.5 cup0.5 cup Medjool Dates, pitted & soaked in hot water for 5 minutes
- 0.25 cup0.25 cup0.25 cup Plain Greek Yogurt
- 1 Tbsp1 Tbsp1 Tbsp Almond Butter, or nut butter of choice
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 1 pinch1 pinch1 pinch Redmond Real Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- preheat oven to 350.
- in a food processor, add oats, pecans, protein powder, monk fruit, vanilla, salt, butter/coconut oil, & a bit of water (adding more as needed).
- blitz a few times until a sticky dough forms.
- add small muffin liners or grease a mini muffin tin.
- add 1 small cookie scoop of crust mixture to the bottom of a muffin tin.
- bake for ~8 minutes; let cool completely.
- to a food processor, add salted caramel ingredients.
- slowly add a little water as needed to thin out a bit.
- add ~1 tsp. salted caramel to the crust.
- add 1 pecan on top & a sprinkle of big flaky sea salt.
