Moroccan Mujadara (Lentils and Quinoa with Caramelized Onions)
Mujadara is traditionally rice and lentils under a heap of caramelized onions; this version swaps in quinoa, which cooks in the same pot in the same time and adds protein. Use brown or green lentils and not red — red turn to mush. The spices go into the water before the grains do, so the cumin and cinnamon season everything from the inside rather than sitting on top. The onions take as long as they take; that is the whole dish. A spoonful of hummus or yogurt on top to finish.
