Chickpea Feta Patties
Chickpea feta patties are my answer to a fridge full of leftover vegetables. Chickpeas, cooked peas, carrots and string beans and two slices of whole wheat bread go into the food processor together, and the vegetables genuinely disappear. Then it’s cheese, feta, eggs and a little flour to bind. Air fry them at 375F with no oil at all, or pan-fry them in avocado oil if you want crisp golden edges.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a food processor, add the chickpeas, onion, vegetables (unless you want a chunkier patty with more texture, then add this later), and whole wheat bread.
- Pour mixture into a large bowl and add in 2 types of cheese, eggs, seasoning, and flour. Once mixed together, this should create a batter that's not too runny.
- To cook, you can either line an air fryer basket with tin foil and use a spoon to create patties on the foil. Cook at 375F for 20 minutes, flipping halfway. Otherwise, you can add oil to a skillet on medium-low heat and fry the patties on both sides til golden brown. Enjoy!
