Pickled Onions
- Add thinly sliced onions, lime juice (enough to ensure onions are fully submerged), salt, and Lakanto Cane Sugar with Monkfruit to a small bowl.
- Massage to combine well until salt & cane sugar w/ monkfruit are fully incorporated and onions begin to soften, about 15-30 seconds.
- Set aside until ready to use, for at least 30 minutes. These can be made in advance—the longer they pickle, the better they taste!
Burger Patties
- Add seasonings to a small bowl and whisk until homogenous (this will help evenly distribute flavor into your ground beef).
- Add ground beef to a medium-sized bowl, and pour seasoning blend on top.
- Use your hands to mix until just combined, being careful not to over-mix because this can lead to tough burgers!
- Divide evenly into 4 portions, roll into balls, then form into patties, pushing a small indentation in the center with your thumb (this will help the patties from shrinking as much when you cook them & help keep their shape).
- Grill or pan-fry until desired doneness.
Time to Assemble!
- Mash avocado with salt, pepper, and lime juice, and distribute avocado evenly between 4 burger bun bottom halves.
- Add patty on top.
- Top with tortilla chips.
- Warm Drippy Dip cheese sauce in a microwave in a small bowl (20 second increments, stirring between, until hot).
- Drizzle about 1/4 cup cheese sauce onto each burger.
- Top with shredded lettuce, pickled onions, and cilantro.
- Spread sour cream or Greek yogurt on top bun, then place on top of the burger.
- Smush down, and devour!
