Turtles are the most underrated candy to me. They've always been one of my favorites--what's better than the combo of chocolate, caramel, and pecans? So dreamy. These are super easy to throw together, and there are a couple of secrets that make this taste spot on!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Carefully stuff each date with a pecan half (it’ll be tightly packed but it’s worth it).
  2. Add chocolate chips and ghee/oil to a microwave safe bowl and microwave in 30 second increments until chocolate is melted and smooth, stirring in between.
  3. Stir in vanilla and a pinch of salt.
  4. Use two forks to dip the stuffed dates into the chocolate mixture, making sure they’re fully covered (forks help make it less messy, and you waste less chocolate).
  5. Place on parchment paper, sprinkle with flaky sea salt, and freeze for 10 minutes.

Notes

Salted pecans are a must here for that special turtle flavor. If you only have raw pecans or unsalted, toss them in a little ghee or coconut oil and salt, and either roast at 350F for 10 minutes or give them a quick sauté on medium heat until fragrant (3ish minutes).
