- 9 oz9 oz9 oz Cinnamon Toast Protein Cereal - Catalina Crunch, use for crust

cinnamon streusel
- 111 Cinnamon Cashew Crunch Protein + Superfood Bar - B.T.R. Nation

- 1/2 cup1/2 cup1/2 cup Cashews, Raw, or nuts of choice

- 1/4 cup1/4 cup1/4 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Cinnamon, Ground

- 1/4 tsp1/4 tsp1/4 tsp Vanilla Finishing Salt - Texas Salt Co., or sea salt

- 2 Tbsp2 Tbsp2 Tbsp Cashew Butter, or nut butter of choice

- 1 Tbsp1 Tbsp1 Tbsp Water
peaches
- 2 cups2 cups2 cups Peaches, diced
- 1/4 cup1/4 cup1/4 cup Golden Monkfruit Sweetener (with Allulose) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Cinnamon, Ground

optional icing

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
crust
- follow my instructions for making protein cheesecake bites, using 4" spring form pans + use cinnamon cereal for the crust.
- add cheesecake mixture on top of crust, then make streusel & peaches to add before baking.
- to make cinnamon streusel, add BTR bar, nuts, monk fruit, cinnamon, & salt to a food processor & blitz into a crumble.
- transfer to a bowl, then add in nut butter & a little bit of water until more of a streusel forms.
- to make peaches, dice them up & toss them with monk fruit + cinnamon.
- to assemble your cheesecake, layer the following: 1/4 cup of cheesecake mixture —> 1/4 cup cinnamon streusel —> 1/2 cup cheesecake mixture —> 1/2 cup peaches —> remaining cinnamon streusel.
- allow to cool completely before adding toppings.
- optional: mix a little powdered monk fruit, nut butter, & water together to form icing, then drizzle on top.
- allow to cool at room temperature, then refrigerate or freeze to cool completely (it’s best to let it set overnight).
