Protein Carrot & Pecan Bites
Sometimes you just want to grab a little treat and with these Protein Carrot & Pecan Bites you can enjoy and know that they are healthy too! These gooey little protein bites taste just like carrot cake and are so delicious! Just a few ingredients and no bake making them the perfect treat to whip up anytime! I like them cold from the refrigerator.
Ingredients
- 0.333 cup0.333 cup0.333 cup Pecan Flour
- 0.666 cup0.666 cup0.666 cup Carrots, shredded
- 0.5 cup0.5 cup0.5 cup Pecan Butter
- 3 whole3 whole3 whole Medjool Dates, pitted & chopped
- 20 gram20 gram20 gram Collagen, (2 scoops)
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 1 tsp1 tsp1 tsp Ground Cinnamon
- 0.5 cup0.5 cup0.5 cup shredded Coconut, unsweetened

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place all ingredients, except coconut into a food processor and blend till a ball forms
- Roll into one inch balls (mix will be wet)
- Roll in coconut
- Refrigerate for at least 2 hours
- Enjoy!
