Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Bloom the gelatin: add 1 cup water to a mixing bowl.
  2. Sprinkle gelatin evenly on top (don’t stir).
  3. Let it bloom for 5–10 minutes until thick and jiggly.
  4. In a small pot, add the remaining 1 cup water + monk fruit.
  5. Heat over medium, stirring until dissolved.
  6. Bring to a simmer and cook 3–4 minutes until slightly thickened (not full caramel—just syrupy).
  7. Start mixing the bloomed gelatin on low.
  8. Slowly stream the hot syrup into the bowl.
  9. Turn the mixer to high and whip 8–10 minutes until it becomes thick, glossy, and tripled in volume.
  10. Add salted caramel collagen, vanilla, and a pinch of salt.
  11. Whip 30 more seconds to combine.
  12. Line a small baking dish with parchment.
  13. Spread the fluffy mixture evenly.
  14. Let set in the fridge for 1-2 hours or overnight.
  15. Cut + enjoy
  16. Lift from the pan, slice into cubes, and toss pieces in more monk fruit to prevent sticking.

Notes

Tips

  • For extra salted-caramel flavor → sprinkle flaky sea salt on top before setting.

  • For a firmer marshmallow → add 1 extra tablespoon of gelatin.
