Sheet Pan Shrimp Fajitas
Fajita's are such an easy meal to prepare! Whether you are having steak, chicken or these Sheet Pan Shrimp Fajita's they are sure to please! This flavorful dish is ready in 30 minutes and has minimal prep time! I love serving it in bowls with all the classic fajita toppings like fresh guacamole, sour cream, cilantro and limes. You can also serve it over it over cauliflower rice. The whole family will love this easy sheet pan dinner!
Ingredients
- 1 lb1 lb1 lb Raw Shrimp, deveined and tails off, pat dry
- 3 whole3 whole3 whole Bell Pepper, seeded & sliced thinly
- 1 whole1 whole1 whole Onion, large, sliced in 1/4" wedges
- 0.25 cup0.25 cup0.25 cup Avocado Oil, plus extra drizzle for shrimp
- 1 tsp1 tsp1 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper
- 0.25 cup0.25 cup0.25 cup Fajita Spice (click for recipe)
- 2 whole2 whole2 whole Lime
- 0.25 cup0.25 cup0.25 cup Cilantro, chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 400˚
- Line a rimmed pan with parchment paper
- Spread peppers & onions evenly on pan
- Drizzle with 1/4 cup oil
- Sprinkle with salt & pepper
- Squeeze juice from one lime over peppers & onions
- Cook for 15 minutes
- Meanwhile, toss shrimp in fajita spice and drizzle with oil, toss again
- Remove pan from oven & add shrimp to pan
- Cook 15 minutes longer, flipping shrimp halfway through
- Garnish with lime wedges & cilantro
