  1. Brown the beef (optional, but worth it)
  2. Season beef with salt and pepper, then sear in a hot skillet for 2–3 minutes per side. This adds a deeper, richer flavor. Transfer to the crockpot.
  3. Add carrots, onion, celery, cauliflower, and garlic. Whisk together the bone broth, BBQ sauce, tomato paste, coffee, and thyme, then pour over everything.
  4. Cover and cook for 7–8 hours on LOW or 4–5 hours on HIGH, until the beef is fork-tender.
  5. Stir in the cauliflower for the final 45–60 minutes on LOW or 30–45 minutes on HIGH. Check with a fork so it’s tender but still holds its shape.
  6. Taste and adjust salt, pepper, or BBQ sauce. Add a splash of apple cider vinegar for brightness. For a thicker broth, stir in the cornstarch slurry and cook another 10–15 minutes.
