Sun-dried Tomato Nut Crusted Artichoke Hearts
If you love artichokes like we do this Sun-dried Tomato Nut Crusted Artichoke Hearts recipe is for you! The artichokes are tossed in a special sun-dried sauce and then dredged in Italian nut crumbs and air fried for the ultimate crunch! I like to serve it with some marinara for dipping but it would be so good dipped in garlic aioli too! They are the perfect appetizer or side dish. Warning, they are delicious even before being air fried so keeping wandering hands off is a job in itself!
Ingredients
- 28 oz28 oz28 oz Artichoke Hearts, packed in water
- 0.5 cup0.5 cup0.5 cup Avocado Oil Mayonnaise
- 0.25 cup0.25 cup0.25 cup Sun Dried Tomatoes, dry, not in oil and chopped rough
- 1 clove1 clove1 clove Garlic, peeled
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 0.25 tsp0.25 tsp0.25 tsp Black Pepper
- 1 cup1 cup1 cup Italian Nut Crumbs, may need a little more
- 1 whole1 whole1 whole Avocado Oil Spray

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Drain artichokes and gently pat dry with paper towels
- Combine in blender, mayonnaise, sun-dried tomatoes, garlic, salt and pepper and blend till smooth
- Gently toss artichokes in mayonnaise mixture using a rubber spatula
- Spray air fryer basket with oil
- Roll each artichoke in nut crumbs and place in a single layer in basket not touching
- Spray again
- Air fry 370 degrees for 12-15 minutes till crispy
- Move to plate and fry second batch
- Enjoy
