The Best Gluten-Free Spicy Chicken Sandwich (Edit recipe)

Pork panko is our favorite way to make delicious gluten/grain-free fried chicken. Adding some hot sauce to the egg wash, and New Bae seasoning and cayenne pepper to the pork panko makes perfectly spicy chicken for a crispy fried chicken sandwich, or spicy chicken nuggets. Enjoy this sandwich with your choice of gluten-free bun, Primal Kitchen Chipotle Mayo, lettuce, tomato, pickles, and onion.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a shallow bowl, whisk together two whole eggs and one teaspoon of sriracha, or your choice of hot sauce.
  2. In another shallow bowl, stir together the pork panko, New Bae Seasoning, and ground cayenne.
  3. Coat each chicken thigh in the egg wash, and then dredge in the pork panko mixture, making sure to liberally coat the chicken with the pork. panko.
  4. Repeat with all of the chicken thighs, placing them on a large plate or baking sheet once they are fully coated in pork panko.
  5. Heat your air fryer to 390 F, and spray the basket with avocado oil. Fry 3 chicken thighs at a time, or however many you can fit in your air fryer for 7 minutes, and then flip the chicken thighs and fry again for a remaining 7 minutes. (see notes for oven-baked method)
  6. While the chicken is cooking in the air fryer, prepare your buns and toppings. We enjoy this sandwich with toasted gluten free buns.
  7. Slice your tomato, red onion, and pickles.
  8. Once the chicken has finished cooking, place one chicken thigh onto the base of a toasted bun. Apply a generous amount of Primal Kitchen Chipotle Mayo to the top of the bun, and top each thigh with lettuce, tomato, pickles, and red onion. Place the top of the bun onto the sandwich, and enjoy.

Notes

If you don't have an air fryer, you can bake the chicken thighs in your oven. Heat the oven to 400F, and place the chicken thighs on a wire rack over a baking sheet. Bake for 40 minutes.
