Two Minute Single Serving Tomato Soup

Ingredients
- 1 cup1 cup1 cup Almond Milk, or any dairy-free milk (I used oat milk)
- 2.5 Tbsp2.5 Tbsp2.5 Tbsp Tomato Paste
- 1/4 tsp1/4 tsp1/4 tsp Honey, or maple syrup
- 2 Tbsp2 Tbsp2 Tbsp Parmesan Cheese, or Italian Blended Cheese
- pinch pinch pinch Truffle Salt, or garlic sea salt
- pinch pinch pinch Black Pepper

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine all ingredients in a microwave-safe bowl (yes you can make this stove-top, it will take longer than 2 minutes in that case)
- Use a whisk or immersion blender and blend the ingredients until smooth
- Microwave for one and half minutes (or cook on the stovetop in a small saucepan until heated through)
- Serve with extra cheese if desired topped with flaky sea salt and parsley
