Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. First, Prep Jam.
  2. Chia jam is 1 cup berries + 1 tsp lemon juice + 1 tbsp chia seeds microwaved together and chilled in the fridge for 2+ hours to thicken).
  3. Next, make the cookies.
  4. Add all of the cookie ingredients to a medium mixing bowl and beat together with a spoon until combined.
  5. Take 1 tbsp of dough and roll into a ball - repeat with all dough.
  6. Place on parchment lined baking sheet and press criss cross pattern with a fork.
  7. Bake at 350°F for 10 minutes.
  8. Let cool completely then take two cookies that match in size.
  9. Add 1 - 2 tsp of jam to one cookie, then top with the other cookie to make a little sandwich. Enjoy!
