Vegan Peanut Butter and Jelly Cookie Sandwiches
These peanut butter and jelly cookie sandwiches are a nod to the childhood classic. Be sure to bake these up at your next holiday baking gathering!

Peanut Butter Cookie Ingredients
- 2 Tbsp2 Tbsp2 Tbsp Vegan Buttery Spread
- 0.5 cup0.5 cup0.5 cup Creamy Peanut Butter
- 0.25 cup0.25 cup0.25 cup Pure Maple Syrup
- 1 cup1 cup1 cup Almond Flour
- 1 tsp1 tsp1 tsp Baking Powder
- 0.125 tsp0.125 tsp0.125 tsp Salt
Jam Ingredients
- 1 cup1 cup1 cup Frozen Mixed Berries, heated in microwave for 1 minute
- 1 tsp1 tsp1 tsp Lemon Juice
- 2 Tbsp2 Tbsp2 Tbsp Chia Seeds

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- First, Prep Jam.
- Chia jam is 1 cup berries + 1 tsp lemon juice + 1 tbsp chia seeds microwaved together and chilled in the fridge for 2+ hours to thicken).
- Next, make the cookies.
- Add all of the cookie ingredients to a medium mixing bowl and beat together with a spoon until combined.
- Take 1 tbsp of dough and roll into a ball - repeat with all dough.
- Place on parchment lined baking sheet and press criss cross pattern with a fork.
- Bake at 350°F for 10 minutes.
- Let cool completely then take two cookies that match in size.
- Add 1 - 2 tsp of jam to one cookie, then top with the other cookie to make a little sandwich. Enjoy!
