- Roast the sweet potatoes: Preheat oven to 425°F (220°C). Scrub the sweet potato and slice into ¼-inch rounds or thin half-moons. Toss with olive oil, salt, paprika, garlic powder, onion powder, and pepper.
- Arrange in a single layer on a parchment-lined baking sheet.
- Roast for 20–25 minutes, flipping halfway through, until golden and fork-tender.
- For crispier edges, broil for 1–2 minutes at the end, watching closely.
- While the sweet potatoes roast, heat a skillet over medium heat.
- Add the ground turkey and cook for 5–7 minutes, breaking it into small crumbles.
- Add the minced garlic, Worcestershire sauce, smoked paprika, and black pepper. Continue cooking until the turkey reaches 165°F internally.
- Stir the BBQ sauce into the cooked turkey.
- Simmer for 1–2 minutes. Taste and add more BBQ sauce or seasoning if desired.
- Heat 1 teaspoon of olive oil in a small pan over medium heat. Add the spinach with a pinch of salt and garlic powder. Sauté for 1–3 minutes until just wilted.
- Spread the roasted sweet potatoes across a serving platter or leave them on the sheet pan.
- Spoon the BBQ turkey over the top, followed by the sautéed spinach.
- Add your favorite toppings. If using cheese, return the pan to the oven for 2–3 minutes to melt.
