Watermelon and Feta Summer Salad
Hear me out, salt on watermelon is SPECTACULAR! The salt wakes up your taste buds! Pairing that combo with a sweet balsamic drizzle, savory feta and a kiss of basil–truly a magical experience! I’ve taken this platter to many parties, bridal showers, neighborhood picnics etc, etc…and everyone has always been curious and then devours it! You’re welcome and Happy Summer Solstice! ☀️
Ingredients
- 1 whole1 whole1 whole Watermelon, medium sized, seedless
- 3 - 5 whole3 - 5 whole3 - 5 whole Basil, Fresh, leaves, cut into thin ribbons
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Feta Cheese, crumbled
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Organic Balsamic Glaze, your favorite brand or homemade, see note
- 1 - 2 tsp1 - 2 tsp1 - 2 tsp Vanilla Baking SALT - am.Niccoli, can sub standard salt as needed

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Chiffonade basil into thin strips and break apart the feta cheese into crumbles, set aside.
- Cut watermelon into approximately 1" slices, removing the rind by your preferred method. Once in slices, use a cookie cutter to cut out shapes or simply cut into similar sized squares. If cutting out shapes, save the leftover parts of the watermelon for smoothies, or simply just for snacking!
- Grab that salt, prepared basil, feta crumbles and balsamic glaze--it's time to play with your food and stack up a platter of deliciousness to enjoy!
- Place your first layer of watermelon pieces on a serving platter, sprinkle with a little vanilla salt, some of the basil ribbons and crumbled feta then drizzle with balsamic glaze, repeat for the remaining layers, stacking and seasoning as you go.
- If you want to take this with you to a gathering, prepare watermelon slices ahead of time and place them in a container and prepare the other elements and put those in containers too. Once you're at your destination, assemble and watch everyone enjoy each piece as it disappears.
Notes
☀️ For balsamic reduction –measure 1 cup of high quality balsamic vinegar into a small saucepan and bring to a slow simmer over medium heat. Once simmering, turn down to low and let it continue to simmer and reduce to about half. It will thicken up as it cools. Store in an airtight container.
☀️ I like to make this a stacked kind of salad so it's a little bit different than serving in a bowl, but you can certainly toss it all together in a bowl to serve if you prefer.
