Wine Dijon Chicken and Carrots (Keto)
This dish is so full of beautiful healthy colors, so full of yummy flavors, you will make it on repeat. Super easy and straightforward this healthy dish looks fancy, but is the perfect weeknight meal.
Ingredients
- 4 pieces4 pieces4 pieces Pasture-raised Chicken Breasts - US Wellness Meats

- 2 Tbsp2 Tbsp2 Tbsp Butter, Salted

- 1 tsp1 tsp1 tsp Sea Salt

- .25 tsp.25 tsp.25 tsp Black Pepper

- 2 cloves2 cloves2 cloves Garlic, Minced

- 1 Tbsp1 Tbsp1 Tbsp Dijon Mustard
- .5 cup.5 cup.5 cup White Wine, I like Sauvignon Blanc, but any will do
- .5 cup.5 cup.5 cup Chicken Broth, or bone broth

- 12 pieces12 pieces12 pieces Sage

- 10 pieces10 pieces10 pieces Basil, Fresh, sliced

- 111 Green Onion (Scallion), sliced

- 666 Rainbow Carrots, Peeled and sliced at an angle
- 1 cup1 cup1 cup Water
- .5 tsp.5 tsp.5 tsp Sea Salt

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large skillet add the butter, turn heat on medium to melt.
- Add the chicken breasts, sprinkle on salt and pepper.
- Sauté for 6-7 minutes, turn and sauté for 6-7 minutes.
- Remove chicken from pan.
- Add garlic, wine, broth, dijon and stir to combine. Allow to cook for 1 minute.
- Add chicken back in to pan. Cook for 6-7 minutes.
- Internal temperature should be 165 degrees.
- Plate and sprinkle on sage, basil, and scallions.
- Serve with carrots, or other vegetables you like.
- Carrots:
- In a small pan add water and salt. Turn heat on medium high.
- Add carrots and steam carrots for 5-6 minutes.
