Salted Caramel Marshmallows are pillowy soft just like regular marshmallows, but without the corn syrup or artificial dyes! And to top it off, they have a boost of protein, too! The salted caramel flavor is delicious for eating these on their own as an after meal sweet tooth fix, but are great on s'mores and in your lattes too! Gluten, dairy, and refined sugar free.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Combine gelatin and 1/2 cup water in a large mixing bowl
  2. In a pot combine remaining 1/2 cup water, honey, and coconut sugar
  3. Heat on stove top, stirring regularly to keep from sticking to the bottom. Cook until you reach a temp btwn 238-230 degrees F (5-8min for me on medium heat)
  4. Once that's reached, pour into mixing bowl with your gelatin bloom
  5. Use a stand or hand mixer and whip for 5-8 minutes, until you get a gooey consistency
  6. Add in vanilla and salted caramel protein powder* and whip another minute until goooey
  7. Pour into loaf tin and refrigerate 1 hour
  8. Slice into squares and coat in powdered sugar substitue to keep from sticking
  9. Optional to dip in drippy caramel and top with sea salt, too!

Notes

Feel free to sub any flavor protein powder for marshmallow flavor of choice
