Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. preheat the oven to 350.
  2. in a blender, blend eggs & cottage cheese.
  3. in a large skillet, saute peppers & onions for 6-8 minutes.
  4. add ground meat to the skillet & brown.
  5. once meat is cooked, add diced tomatoes/green chiles, vinegar & seasonings to make “chorizo” meat.
  6. add meat & cotija cheese to egg mixture.
  7. pour equal amount of egg mixture into 24 muffin tins.
  8. bake the egg muffins for 18-22 minutes or until eggs are set.
  9. store in an air-tight container in the fridge for up to 3 days or in the freezer for up to 3 months.
