mini hawaiian flatbreads
it's definitely the time of year in the mid-west we could all use an escape to hawaii! while hawaiian pizza is most certainly NOT authentic hawaiian cuisine, I like thinking I am getting a little tropical flare here in the midwest!
Ingredients
- 0.25 cup0.25 cup0.25 cup Pineapple, chopped
- 3 - 4 oz3 - 4 oz3 - 4 oz Ham, diced
- 1-2 Tbsp1-2 Tbsp1-2 Tbsp No-Sugar Hickory BBQ Sauce - Yo Mama's Foods
- 0.25 cup0.25 cup0.25 cup Cottage Cheese
- 222 cauliflower crust flatbreads or buns (click for recipe), made into buns OR 2 small tortillas
- 1 oz1 oz1 oz Pepper Jack Cheese, shredded
- Cilantro, to gnash

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- optional: sauté pineapple & ham to get a little crispy & caramelized before building flatbreads.
- in a small bowl, mix together bbq sauce & cottage cheese.
- to each cauliflower bun (or tortilla) add a layer of bbq mixture, then add ham, pineapple, & cheese.
- add flatbreads to a pan & cook until cheese is melted.
- garnish with cilantro.
