Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Start with 1⅓ cups (about 250g) of dried chickpeas. Place them in a large bowl and cover with plenty of water (they’ll expand!). Soak overnight or for at least 8 hours until they’ve tripled in size. You should end up with about 4 cups of soaked chickpeas.
- Blend the chickpeas and rest of the ingredients in a food processor until mostly mixed (you don’t want it to be 100% smooth).
- It should feel a bit like a damp, crumbly dough that you can squeeze into a ball or patty without it falling apart. If it’s too dry and won’t hold, add a splash of water or lemon juice. If it’s too wet or mushy, mix in a little chickpea flour or more breadcrumbs.
- Roll into balls and airfry at 180 degrees celcius for 7 minutes. Spray with a little olive oil before airfrying.
- Flip them over
- Airfry for another 7 minutes or until cooked.
- Serve with salad or in a wrap
- Makes about 20-30 small falafels or 15-20 larger patties, depending on how big you roll them.
- Store cooked falafels in an airtight container in the fridge for up to 5 days.
Notes
Meal prep tip: Uncooked falafel mix can also be kept in the fridge for up to 3 days – just scoop and cook as needed.
