Cool off with this no cook, easy paleo, summer pasta salad!
Ingredients
- 2 cups2 cups2 cups Hearts of Palm Spaghetti, (or pasta of choice including zoodles, rice noodles, cassava pasta)
- 0.5 cup0.5 cup0.5 cup Kalamata Olives, pitted, drained and quartered
- 1 cup1 cup1 cup Cucumber, diced
- 1 cup1 cup1 cup Cherry Tomato, quartered
- 0.5 cup0.5 cup0.5 cup Sun Dried Tomatoes, drained and diced
- 1 cup1 cup1 cup Artichoke Hearts
- 0.25 cup0.25 cup0.25 cup Extra Virgin Olive Oil
- 2 Tbsp2 Tbsp2 Tbsp Lemon Juice
- 0.666 tsp0.666 tsp0.666 tsp Salt
- 0.333 tsp0.333 tsp0.333 tsp dried Oregano
- 6 whole6 whole6 whole fresh Basil, chopped
