Easy Zucchini Fritters
When it comes to zucchini, I find it difficult to steer away from my classic recipes. I decided to put the zucchinis from our garden to use with this easy and simple recipe. The best part about this recipe is that you can make it in one bowl and make them in advance if you would like to serve them for a party!
Ingredients
- 1 whole1 whole1 whole Zucchini, Shredded, drained
- 2 whole2 whole2 whole Eggs, Beaten
- 1 pinch1 pinch1 pinch Salt
- 1 pinch1 pinch1 pinch Black Pepper
- 1 Tbsp1 Tbsp1 Tbsp Garlic Powder
- 1 whole1 whole1 whole Whole Cloves, of garlic, pressed
- 1.5 cups1.5 cups1.5 cups All Purpose Flour

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add your eggs, zucchini, salt, pepper, garlic, and flour to a large bowl.
- Mix well together. It should form a pancake-like batter.
- In a large pan, cover it with about 1 inch of neutral oil and wait until it's hot.
- Grab a large spoon or ice cream scooper to pick up some batter.
- Flatten the batter into the pan to form circular patties.
- Fry on each side on medium heat for about 3-5 min each.
- Flip and repeat until finished with the batter.
Notes
If you're enjoying these the next day, try to pop them in the air fryer for a few minutes. Super crunchy again! I like to serve mine with sour cream & parmesan but anything works, really.
