Copycat Popeye’s Chicken
This Copycat Popeye's Chicken was created especially for David. He had been asking for months if I would make it just because it looked so good on the commercial! Having never had Popeye's chicken I'm not sure if it tastes like it but I will say this chicken is the bomb! It's spicy and crunchy coating with the juiciest, tender meat is something to sink your teeth in to! We are spice wimps over here so feel free to kick the heat up by using Louisiana hot sauce and increasing the cayenne. The family will be begging you to make this over and over!
Ingredients
- 3 - 4 lb3 - 4 lb3 - 4 lb Whole Chicken, cut into pieces
- 12 oz12 oz12 oz Almond Milk Yogurt, unsweetened, I like Foragers cashewgurt
- 3 whole3 whole3 whole Eggs, beaten in a large bowl with 1/4 cup water
- 1 cup1 cup1 cup Medium Buffalo Sauce, see note
- 1 cup1 cup1 cup Almond Meal/Flour
- 1 cup1 cup1 cup Cassava Flour
- 1 cup1 cup1 cup Tapioca Starch
- 0.5 cup0.5 cup0.5 cup Arrowroot Flour
- 1 tsp1 tsp1 tsp Salt
- 1 tsp1 tsp1 tsp Black Pepper
- 1 tsp1 tsp1 tsp Cayenne Pepper, or more if you like heat
- 2 tsp2 tsp2 tsp Onion Powder
- 2 tsp2 tsp2 tsp Garlic Powder
- 1 tsp1 tsp1 tsp Dry Mustard Powder
- Avocado Oil Spray

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Place chicken pieces in a large bowl
- Add yogurt, stir, cover & refrigerate 2 hours
- Line baking sheet with foil & use baking racks, spray well with oil
- Preheat oven to 375°F
- Mix in large bowl, flours, arrowroot & all spice
- Mix in another bowl, egg mix & buffalo sauce
- Let excess yogurt drip off chicken pieces & dip in flour mix, egg mix & flour mix again
- Place on rack trying not to touch other pieces
- Spray chicken well with oil spray
- Bake for one hour or till cooked through
- You may need to spray again halfway through
