Healthier Baked Mac & Cheese (gluten free) (Edit recipe)

This gluten free Mac & cheese is incredible creamy and smooth, but then baked with a crunchy cheesy topping! It's made with nourishing ingredients, and it's got hidden veggies, too! My toddlers loved it, I loved the quality of the food they were loving, and I'm sure your family, or your holiday guests, will love this dish too!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Boil your pasta according to instructions
  2. When 5 minutes remain, add chopped cauliflower and continue boiling
  3. In a separate pan melt butter, then add flour, milk & broth and combine well
  4. Add in 1 cup cheddar cheese and stir until cheese is melted and you're left with a creamy mixture
  5. Pour pasta & cauliflower into cheese sauce and coat well
  6. Pour into a greased 8x8 pan
  7. Sprinkle with remaining 1/2 cup cheddar cheese and course breadcrumbs
  8. Bake at 375 for 15-18minutes, or until top is lightly golden
  9. Enjoy!

Notes

I used gluten free cheddar squares, processed until bread crumb like consistency for topping! It has the perfect cheesy crunch. Feel free to use crackers, finely crushed, or bread crumbs too! // Double the recipe if baking for a large crowd, or in a 9x13 dish.
