Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add the fresh pineapple, ketchup, brown sugar, honey, apple cider vinegar, and seasonings to a blender. Blend on high until fully combined and smooth.
- Pour 1/2 cup of the sauce into a resealable bag or container along with the olive oil. Add the chicken breasts, seal, and marinate in the refrigerator for 2 to 6 hours. Do not exceed 6 hours.
- Transfer the remaining sauce to a separate resealable container and refrigerate until ready to use.
- Heat your grill to medium. Remove the chicken from the marinade and discard the used marinade. Grill the breasts for 6 to 8 minutes per side, depending on thickness, until the internal temperature reaches 165°F. Use an instant-read thermometer inserted into the thickest part of the breast to check.
- Immediately off the grill, slather some of the reserved sauce generously over each breast. Let rest for a few minutes before serving.
Notes
Garnish with sliced green onions, fresh cilantro, or grilled pineapple slices.
Do not marinate longer than 6 hours. Fresh pineapple contains an enzyme that tenderizes meat. Beyond 6 hours it can work too aggressively, breaking down the exterior of the chicken and leaving you with a mushy texture. Keep it in the sweet spot and you'll get a perfectly juicy breast with great flavor.
