This Adobo Pineapple BBQ Chicken is a sweeter, fresher take on summer BBQ chicken, and the marinade is everything. US Wellness Meats chicken breasts soak up every bit of this sauce made with fresh pineapple, True Made Foods low-sugar ketchup, Lakanto's brown sugar and Primal Palate's Adobo seasoning. Pull them off the grill, slather on another round of sauce, and save whatever's left for your next cookout moment.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add the fresh pineapple, ketchup, brown sugar, honey, apple cider vinegar, and seasonings to a blender. Blend on high until fully combined and smooth.
  2. Pour 1/2 cup of the sauce into a resealable bag or container along with the olive oil. Add the chicken breasts, seal, and marinate in the refrigerator for 2 to 6 hours. Do not exceed 6 hours.
  3. Transfer the remaining sauce to a separate resealable container and refrigerate until ready to use.
  4. Heat your grill to medium. Remove the chicken from the marinade and discard the used marinade. Grill the breasts for 6 to 8 minutes per side, depending on thickness, until the internal temperature reaches 165°F. Use an instant-read thermometer inserted into the thickest part of the breast to check.
  5. Immediately off the grill, slather some of the reserved sauce generously over each breast. Let rest for a few minutes before serving.

Notes

Garnish with sliced green onions, fresh cilantro, or grilled pineapple slices.

Do not marinate longer than 6 hours. Fresh pineapple contains an enzyme that tenderizes meat. Beyond 6 hours it can work too aggressively, breaking down the exterior of the chicken and leaving you with a mushy texture. Keep it in the sweet spot and you'll get a perfectly juicy breast with great flavor.
