Grilled Pineapple + BBQ Chicken Nachos
These summer nachos are the perfect sharing plate for your cookouts and gatherings! They're full of sweet + spicy fresh flavor, and they're super simple to make! I used leftover shredded BBQ chicken from my Caramelized Peach + BBQ chicken pizza, so these nachos took just minutes to throw together! Even if you're cooking from scratch these nachos are ready in just 30 min!
Ingredients
- 1 whole1 whole1 whole Corn Tortilla Chips, 1 bag chips of choice
- 0.5 lb0.5 lb0.5 lb Pasture-raised Chicken Breasts - US Wellness Meats

- .5 cup.5 cup.5 cup Pitmaster Original (Kansas City-Style) BBQ Sauce - True Made Foods

- 1 Tbsp1 Tbsp1 Tbsp Pineapple Juice
- 1 cup1 cup1 cup Pineapple, Chopped into 1/2" pieces
- 1 Tbsp1 Tbsp1 Tbsp Brown Monkfruit and Erythritol Sweetener (Brown Sugar Replacement) - Lakanto

- 1 tsp1 tsp1 tsp Avocado Oil
- 0.25 whole0.25 whole0.25 whole Red Onion, Thinly sliced
- 1 whole1 whole1 whole Jalapeño Pepper, Chopped
- 0.333 cup0.333 cup0.333 cup Monterey Jack Cheese
- 3 Tbsp3 Tbsp3 Tbsp Cilantro
- 3 - 4 Tbsp3 - 4 Tbsp3 - 4 Tbsp Blanco Cheese Dip - Drippy Dip

- 1 bunch1 bunch1 bunch Lime, Lime wedges for serving

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- For easy shredded chicken bake your chicken breast with a drizzle of olive oil at 400F for 20-25 min until internal temp reaches 165F
- Use a stand or hand electric mixer to easily shred chicken
- Toss with BBQ sauce & pineapple juice
- Next, grill your pineapple
- Toss your cubed pineapple with avocado oil & monkfruit brown sugar to fully coat, and grill or sautee 2-3 min per side
- Assemble your nachos
- Cover a baking tray with tortilla chips (I like Siete lime tortilla chips with avocado oil / no seed oils!)
- Place your chicken, onion, jalapeño, grilled pineapple, and shredded Monterrey Jack or mozzarella
- Broil for 2-3 minutes until cheese is melted
- Top with warmed Blanco Cheese Dip, fresh cilantro, and squeeze from fresh lime for serving
- Enjoy!
