Albondigas is a flavorful soup from Mexico. It is typically made with meatballs and a flavorful broth with rice mixed into the meat mixture. In this quick and easy pour-and-go version, we use pre-made meatballs that simmer up in the flavorful broth, allowing you to bring a hearty, healthy soup to the table in 30 minutes. You can opt to use bone broth in the recipe to make it even more nourishing. Feel free to add some diced carrots, potatoes, and zucchini to the broth as well to make an even heartier stew. *Italy also has a version of meatball soup called Italian Wedding Soup. Ingredients

  • 6 cups Chicken Broth, can sub bone broth of choice
  • 13-16 oz Meatballs, frozen or fresh, pork, chicken, turkey, or vegetarian-friendly meatballs, cut into quarters. We love US Wellness Meats Sugar-Free Pork Meatballs.
  • 2 cups Kale, chopped
  • 1 whole Latin Inspired Flavor Starter Sauce - Mesa de Vida, 1 bottle
  • .5 cup Basmati Rice, or your favorite rice
  • .25 tsp Salt, to taste
  • 1 whole Lime, optional for garnish
  • 1-2 Tbsp Cilantro, chopped, optional for garnish

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Place the broth, meatballs, kale, Mesa de Vida Latin Inspired Meal Starter Sauce, rice, and salt to taste into a soup pot.
  2. Bring to a simmer, then lower the heat to low and cover, cook for 30 minutes.
  3. Squeeze each serving with fresh lime and a sprinkle of cilantro to serve.
