Beef and Lentil Stew

Ingredients
- 1-1.5 lb1-1.5 lb1-1.5 lb Beef Chuck Roast, boneless stew meat, cut into 1" chunks
- 1 cup1 cup1 cup Carrots, chopped, or whatever veggies you have on hand 2 cups total
- 1 cup1 cup1 cup Red Bell Pepper, chopped, or whatever veggies you have on hand 2 cups total
- 1 whole1 whole1 whole Creole Inspired Flavor Starter Sauce - Mesa de Vida, or your favorite Mesa de Vida bottled sauce
- .5 cup.5 cup.5 cup Lentils (dried), rinsed and drained
- 2 cups2 cups2 cups Bone Broth, flavor of choice
- .5 tsp.5 tsp.5 tsp Salt, to taste
- .25 cup.25 cup.25 cup Flat Leaf Parsley, finely chopped, optional garnish

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Optional step: sear the beef in a small amount of hot oil/fat on each side until golden brown.
- Combine the ingredients to a Dutch oven, soup pot, or high-sided skillet with a lid. (Or, add to your slow cooker and set to cook on low for 6-8 hours.)
- Bring to a simmer over medium-high heat, lower the heat to low and cook for 45 minutes to 1 hour, cooking until the beef is fall-apart tender.
- Taste to check for seasoning, add salt if necessary. Serve and enjoy!
