Beetroot Salad with Apples and Walnuts
This is a recipe I have been making forever. Being a beetroot lover I am always looking for different ways to enjoy it. This salad has such an sweet earthy flavor from the beets and added crunch from the apples and walnuts. To make it even easier, I use store bought beets that are ready to eat out of the package! If you love beets this is a must try!
Ingredients
- 1.5 lb1.5 lb1.5 lb Beetroot, cut in bite size pieces, I like Love Beets, prepackaged
- 2 whole2 whole2 whole Pink Lady Apple, cored and diced
- 2 pieces2 pieces2 pieces Celery, sliced thinly
- 1 whole1 whole1 whole Lime, large, juiced
- 1 cup1 cup1 cup Organic Walnuts, chopped
- 0.25 cup0.25 cup0.25 cup Red Onion, diced
- 0.25 cup0.25 cup0.25 cup Dill Weed, chopped
- 0.5 cup0.5 cup0.5 cup Avocado Oil Mayonnaise, I like Chosen Foods
- 1 tsp1 tsp1 tsp Salt
- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large bowl add beets, apples, celery, walnuts and onion and toss well
- In a small bowl whisk together mayo, dill, salt, pepper and lime juice
- Add mayo mixture to beet mixture and mix well
- Enjoy!
