okay… i’m obsessed with flatbreads! 🌶️🍕✨
this cajun chicken flatbread is loaded with bold cajun flavor, high in protein, naturally gluten-free, & gets an extra nutrient boost from diced berski's cajun ancestral meat sticks on top. smoky, spicy, creamy, & ready in about 10 minutes!
Ingredients
cajun remoulade sauce
- 0.5 cup0.5 cup0.5 cup Plain Greek Yogurt
- 1 Tbsp1 Tbsp1 Tbsp Dairy-Free Buffalo Sauce - Primal Kitchen, or hot sauce of choice

- 1 Tbsp1 Tbsp1 Tbsp Unsweetened Classic Ketchup - Yo Mama's Foods

- 1 Tbsp1 Tbsp1 Tbsp Dijon Mustard

- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice
- 1 Tbsp1 Tbsp1 Tbsp Horseradish

- 1 Tbsp1 Tbsp1 Tbsp Capers, or pickle juice
- 1 Tbsp1 Tbsp1 Tbsp Classic Monkfruit Sweetener with Allulose (White Sugar Replacement) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Cajun Seasoning

flatbread
- mini protein flatbreads (click for recipe)
- oven-baked chicken thighs (click for recipe), diced
- sautéed frozen vegetables (click for recipe), I used peppers, onions, mushrooms, & corn
- Pepper Jack Cheese, or mozzarella
- Ancestral Blend Meat Sticks - Berski, I used the cajun flavor, diced
- Pickled Okra, diced
- Six Mix Crispy Veggie Chips - Root Foods, for serving OR your favorite veggies

- Tomato Chips - Root Foods, for serving OR your favorite veggies

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- first, make my homemade mini protein flatbreads.
- increase oven temperature to 400.
- make a batch of cajun remoulade sauce by mixing all ingredients together.
- mix cajun remoulade sauce with chicken & sauteed veggies.
- add cajun mixture on top of flatbread, then layer on cheese & optional diced cajun meat sticks.
- bake flatbreads for ~10 minutes, with option to broil for 2-3 minutes.
- garnish with pickled okra & anything else your heart desires!
- using extra cajun remoulade sauce, drizzle on top & serve as a side with your favorite veggies & veggie chips.
